Let’s be real—food choices with T1D can feel like a minefield. There’s so much info out there, and half of it makes you question EVERYTHING you’ve ever eaten, right?!
I used to stress over whether I was eating the “right” way, but after 40+ years of living with T1D, I’ve figured out what actually works for me—without the overwhelm!
For me, it’s a lower-carb meal plan (not NO carb, just lower) because it helps keep my blood sugars more predictable. I’m not about extreme food rules—just making choices that make my life easier.
What Works for Me
Whole foods over processed – I stick to real food, like eggs, meat, fish, chicken, Greek yogurt, berries, cheese, milk, veggies, avocado, nuts and olive oil. The more I can keep it simple and unprocessed, the better for my T1D. I try to balance carbs, protein, and fats, at every meal because i believe it’s all about balance!
I don’t CUT carbs, but I’m very selective – T1D is a full-time job, and I don’t need any extra chaos. I stick to lower-carb options that don’t spike my blood sugar, like non-starchy veggies (leafy greens, zucchini, pumpkin), berries (strawberries, blueberries, raspberries), nuts & seeds (for healthy fats + crunch), and occasionally slow-digesting carbs like sweet potato or whole grains.
Fibre & healthy fats are key – Fibre (from veggies, berries, nuts, and seeds) helps with blood sugar control, while healthy fats (think avocados, olive oil, nuts) keep me satisfied and balanced throughout the day.
I use a carb counter to make life easier – My go-to is MyFitnessPal. I don’t track obsessively, but it’s a game-changer for checking carb counts and avoiding those sneaky “oops” moments.
The Biggest Mindset Shift I’ve Made
I used to overthink EVERYTHING! Then I realised there’s no perfect way to eat—just what works best for YOU! There’s no “good” or “bad” food. There’s just food, insulin, and what makes you feel your best. That’s it!
Now… eating at home? I’ve got that figured out. Eating out? That’s a whole other adventure. Maybe we’ll save that chaos for another day!
Before I go—quick disclaimer: I’m not a dietitian or a nutritionist. I’m just a T1D who’s been doing this for a long time and sharing what’s worked for me. Everyone’s different, so take what works for you and leave the rest.
